Sangūbashi is a quiet residential neighbourhood, just a short walk from Shinjuku and Shibuya, and yet it feels a world away from the city’s hustle and bustle. We opened Fuglen Sangūbashi in January 2024, transforming a 59-year-old wooden house into a space for customers to slow down and savour coffee.
Fuglen Sangūbashi, our sixth outpost in Japan, is a fresh departure from all the other Fuglen cafes. The concept is to pursue the essence of coffee beans at the deepest level. Here, we use the same coffee beans we have at our other locations, but we extract richer tastes, aromas and textures from them. Since we established our own roasting operation in Japan in 2014, we have been managing every process in-house from sourcing to brewing, which led us to realise that high quality coffee beans have truly rich characters. But, there is a limit on the time and equipment to make a cup of coffee for each customer in a standard cafe operation. We created Fuglen Sangūbashi as a place to draw out the maximum potential from our coffee beans by taking extra time and steps in preparation and brewing.
The menu is pared-back: coffee courses and a cup of special hand-brew. And to provide a total experience, we finished the interior with natural materials as much as possible. On the counter, where we serve each customer, lies the Daté Kan stone; the basalt formed twenty million years ago was shaped by craftspeople at Okurayama Studio in Miyagi prefecture. The cups were made especially for us by potters Genta Yamamoto in Hoshino village, Fukuoka, and Yui Kato in Yomitan village, Okinawa. The room is dimly lit to let the handiwork speak for themselves in natural light, which creates different moods throughout the day and year. We hope you enjoy an immersive experience in a new Fuglen world.
